LEMONY FRESH & DELICIOUS





There is nothing like the smell of fresh lemons coming from the oven on a Saturday morning!


I was scrolling Facebook and came across this recipe that I HAD to try! I cannot remember where I saw it and really want to find the original author!!


First of all, it was lemon, and second it was one of those recipes that required ONLY normal ingredients I have in the pantry already!!









1/2 Cup unsalted butter

1 Cup sugar

2 Large Eggs

1 Lemon , Juiced & Zest

1 1/2 Cup All Purpose Flour

1 Tsp Baking Powder

Pinch of salt

1 Tsp Vanilla

1/4 Cup Cream(half and half works too but cream will make a moister loaf)


Glaze:

1 1/3 Cup Icing Sugar(also known as powdered sugar, confectioners)

1/2 Lemon, juiced & Zest

1/2 Tsp Vanilla





Preheat the oven to 350'F.


Grease and flour a medium loaf pan.


Cream butter and sugar together. Use a kitchen aid stand mixer on low or a hand mixer.


In a separate bowl mix eggs and vanilla well, add lemon juice and zest.








Add egg mixture into the butter mix, beat slowly.


Add remaining ingredients and mix well.


Pour batter into floured pan.





Bake for 40 minutes, or until toothpick test is clean. In my gas oven it was approx 55mins until it was ready.


Cool in pan 10 minutes before removing to wire rack.





Cool another 10 minutes before topping with glaze.


Glaze:


Mix all ingredients in a bowl until well combined.



Put a large container under the wire rack then pour glaze onto the loaf and let drip into the container.





Let the loaf fully coal then cut and serve!!



TIP** I added more zest and used a regular-sized grater. I love bigger chunks of lemon zest! Add more or less based on your taste!!!
