ON POINT PANCAKES!

Updated: Jul 19, 2020

What's better than fluffy, fresh, delicious pancakes on a Saturday morning? These pancakes with a side of bacon for me of course!

Follow along as I take you on a mouthwatering journey to creating the perfect pillow of perfection!

1 cup all-purpose flour, (spooned and leveled)

2 tbsp sugar.

2 tsp baking powder.

1/2 tsp salt.

1 cup milk.

2 tbsp vegetable oil.

1 tsp Vanilla

1 large egg.

1 tbsp vegetable oil(for frying your pancakes) We use clarified butter(How to make your own coming soon!) You can also mix a little oil and butter and it will cook the pancakes really nicely!

Get all your ingredients together and ready for a pancake party!

In 1 bowl combine all dry ingredients:

1 cup all-purpose flour, (spooned and leveled)

2 tbsp sugar.

2 tsp baking powder.

1/2 tsp salt.

Mix until combined.

In a second bowl combine all wet ingredients:

1 cup milk.

2 tbsp vegetable oil.

1 tsp vanilla

1 large egg.

Mix until combined.

Pour the wet ingredients into the dry ingredient bowl and mix.

**TIP do not overmix as it will make the pancakes more runny and flat. If there are some chunks left that's ok!!

Now add in any extras you want! We LOVE bananas, walnuts, and of course chocolate chips!

I have no measurement for this because you can add as much as you want! With banana, the more you add the harder it is to completely cook the pancake.

**TIP!! When adding "extras" Fold them into the batter with a spatula or spoon so that you do not overmix the batter.

Turn your oven on to 150'F and put a pan in for your finished pancakes so they stay warm until you eat!

Preheat the frying pan you will use OR if you have a pancake skillet. I find medium on my gas stove to be ideal!

Scoop the batter out with a ladle into the pan. It is a thicker batter so I find it easier this way.

You will know its time to flip when you notice bubbles coming up through the pancakes.

Remove from the pan when they are done to your taste(more or less brown) and place in the oven to stay warm!

We CANNOT have pancakes without BACON!

And now the fun part eating them!

Add any toppings you want!! We love Nutella and syrup!

Here are a few other suggestions from our readers:

Susan F suggests apples & cinnamon!!

Miriam S suggests Matcha or coconut!
